8 chicken thighs, dusted in plain flour
1 cup red wine
500ml passata
400g tinned tomato
2 Tbsp tomato sauce
2 cloves garlic, crushed
Few good sprigs of oregano
12 chat potatoes, halved
Oven to 160C.
Brown dusted thighs in oil. Add wine & bring to boil. Add remaining ingredients and cook in the oven 2 hours, covered for the first hour.
Serve over baby spinach.
